Cranberry Pancakes w/Apricots 

 

For syrup:
1 cup Aunt Jemima Syrup
1/4 cup dried cranberries
1/4 cup chopped dried apricots
2 teaspoons fresh lemon juice

For pancakes:
Aunt Jemima Original Pancake & Waffle Mix
2/3 cup cream cheese spread (in tub; not whipped or block)

  1. For syrup:
  2. Simmer syrup and dried fruits in a saucepan, uncovered, until fruits are plumped, about 5 minutes. Remove from heat and stir in juice.
  3. For pancakes:
  4. Follow directions on box of pancake mix, adding cream cheese until just combined.
  5. Prepare pancakes as usual and serve with warm syrup.
  • These make a delicious dessert as well as a good sweet breakfast!
