For syrup:
1 cup Aunt Jemima Syrup
1/4 cup dried cranberries
1/4 cup chopped dried apricots
2 teaspoons fresh lemon juice
For pancakes:
Aunt Jemima Original Pancake & Waffle Mix
2/3 cup cream cheese spread (in tub; not whipped or block)
- For syrup:
- Simmer syrup and dried fruits in a saucepan, uncovered, until fruits are plumped, about 5 minutes. Remove from heat and stir in juice.
- For pancakes:
- Follow directions on box of pancake mix, adding cream cheese until just combined.
- Prepare pancakes as usual and serve with warm syrup.
- These make a delicious dessert as well as a good sweet breakfast!
