1 cup Aunt Jemima Whole Wheat Blend Pancake & Waffle Mix
2/3 cup lowfat milk
1 egg
1/4 cup applesauce (I like to use strawberry or other fruit flavored applesauce)
Sugar-free or lite syrup
- Mix all ingredients together using a wire whisk. If the mixture seems too thick, add a little milk, 1 or 2 tablespoons at a time.
- Spray griddle with a non-stick cooking spray and preheat on medium heat. Pour 1/3 cup of mixture onto hot griddle and cook until bubbles form on top. Flip pancakes and cook until the second side is browned.
- Top with more applesauce and/or fresh fruit, and sugar-free syrup.
- These pancakes are delicious and guilt-free. Low in fat and high in fiber.
