Oatmeal Pear 'n Pecan Pancakes 

 

1 cup Aunt Jemima Pancake Mix - I have tried Original, Buttermilk and Whole Wheat Blend.
1 cup milk
2 eggs
2 tablespoon vegetable oil
1 teaspoon ground cinnamon
3/4 cup Quaker Oats quick or old-fashioned uncooked (I have only tried the recipe with the quick oats)
1 medium firm-ripe pear, cored and chopped (I have also used a granny smith apple and it tasted good)
3 tablespoon chopped toasted pecans
Warm real maple syrup
Additional pear (or apple) slices
Additional toasted pecans

  1. Make sure to toast pecans before starting. Place in oven on shallow baking pan at about 350 degrees for 5 to 10 minutes, stirring occasionally or until light brown and fragrant.
  2. In a large bowl, stir together pancake mix and cinnamon. In a medium bowl, combine milk, egg, and oil until blended. Add to pancake mix, stirring with wire whisk just until combined. Gently stir in pears, oats and pecans. Let stand 1 to 2 minutes to thicken.
  3. Cook pancakes on hot griddle according to package directions. This batter is a bit thicker than normal, so I try to smooth and flatten the pancake out a little after pouring the batter. Serve with warm maple syrup and, if desired, pear slices and additional pecans.
  • Recipe makes 8 pancakes.
  • I have made this recipe on three separate occasions and each time, I have been told they are the best pancakes they have ever had. I must confess I got this recipe from Quaker Oats.
